Eggs and bread are commonly used for breakfast by many. This interesting recipe uses both the ingredients in one dish. Some other interesting breakfast (egg) recipes in this blog are Stuffed Masala Eggs, Batata Anda, Egg Spinach Wrap and Boiled Egg Sandwich
I have used whole-wheat bread for the recipe. However you can use any bread of your choice. I have used 3 eggs and 2 bread slices here as my family likes more of eggs in the dish. You can make the dish with equal number of eggs and bread slices , i.e. 3 slices of bread with 3 eggs. Add the bread cubes to the dish before the eggs are fully cooked so that the bread cubes are coated well with eggs.
Step by step recipe
Break 3 eggs in a bowl
Add black pepper powder and salt. Beat well and keep aside.
Trim the edges of the bread slices and cut into cubes. Keep aside
Heat oil in a pan. Add chopped onion, chopped green chillies, chopped ginger and garlic.
Saute till the onions become soft.
Add chopped tomato.
Saute till the tomato becomes mushy. Add turmeric powder, red chilly powder, cumin coriander powder and salt.
Pour the beaten egg mixture
Stir on low flame for 2 to 3 minutes. Before the eggs are fully cooked, add bread cubes
Mix gently. Garnish with chopped coriander leaves.
