Piyush

Piyush  – a refreshing, creamy summer drink that is native to the states of Maharashtra and Gujarat.

Summer is the time for milkshakes, ice creams, kulfis and other summer treats. Piyush is a cooling drink made by mixing shrikhand with buttermilk and is flavoured with nutmeg, cardamom and nuts. Variants of Piyush can be made using different flavours of shrikhand. I have made two flavors of Piyush using two different flavours of shrikhand – Kesar Piyush and Rose Piyush.

Ingredients

For Kesar Piyush

½ cup kesar shrikhand
1 cup salted buttermilk
2 to 3 tbsp powdered sugar
¼ cup saffron milk *
a tiny pinch of nutmeg powder (jaiphal)
a tiny pinch of cardamom powder
chopped pistachios and almonds for garnishing

*saffron milk is made by soaking few threads of saffron in warm milk for 30 minutes to 1 hour

For Rose Piyush

½ cup rose shrikhand
1 cup salted buttermilk
1 tbsp rose syrup
few rose petals and chopped pistachios for garnishing

Method

For Kesar Piyush

  • In a mixing bowl, place the kesar shrikhand.
  • Add buttermilk, powdered sugar, saffron milk, nutmeg powder, cardamom powder and mix well using a whisk or a hand blender.
  • Refrigerate and serve chilled, garnished with chopped almonds, pistachios and few threads of saffron.

For Rose Piyush

  • In a mixing bow, place the rose shrikhand.
  • Add buttermilk, rose syrup and mix well using a whisk or a hand blender.
  • You can add powdered sugar if required.
  • Refrigerate and serve chilled, garnished with chopped pistachios and dried rose petals.
