Beetroot Chaas – a perfect summer drink made by by blending curds with beetroot, mint leaves and spices.

There is no respite from heat yet for Mumbaikars due to soaring temperatures. The scorching summer can leave us dehydrated . Hence it is essential to drink plenty of fluids throughout the day. There are many simple, natural summer coolers that can be easily made at home. The natural homemade summer coolers are healthier option as opposed to store bought sugary drinks that are full of preservatives.

Chaas is  a nutritious and cooling beverage that can be easily made at home with basic ingredients from our kitchen. All we need is curds, water and salt. Chaas is light on the stomach and helps to regulate the body temperature. It is a perfect summer drink. There are many variations of chaas one can make. Some of the chaas recipes on this blog are plain buttermilk, masala chaas, pudina chaas, cucumber chaas and vegan (coconut & raw mango) chaas.

Beetroot chaas is not only flavourful but also nutritious and an attractive looking summer drink. Beetroot imparts a unique taste and earthy flavour to the chaas.

Beetroot Chaas

List of ingredients to make Beetroot Chaas

Curds
Beetroot
Herbs
 : mint leaves and ginger
Spices : green chilly, roasted cumin powder
salt
Tempering : oil, mustard seeds and curry leaves

Step-wise recipe with pictures

Peel and chop beetroot.

Combine chopped beetroot, green chilly, mint leaves, ginger and curds. Blend to a smooth paste.

Transfer to a mixing bowl. Add salt and roasted cumin powder.

Add 2 cups of chilled water and mix well.

Heat oil in a small pan for tempering. Add mustard seeds and curry leaves.

When they start spluttering, pour the tempering into beetroot chaas.

Refrigerate and serve chilled.

Ingredients

  • 1 small beetroot
  • 1 cup of curds
  • 1 small green chilly
  • a small piece of ginger
  • 2 tbsp mint leaves
  • ½ tsp roasted cumin powder
  • salt

For tempering

  • 1 tsp oil
  • ½  tsp mustard seeds
  • few curry leaves

Instructions

  • Peel and chop beetroot into small pieces.
  • Transfer chopped beetroot into a blender jar.
  • Add green chilly, ginger, mint leaves and curds.
  • Blend until smooth.
  • Now add roasted cumin powder, salt and 2 cups of chilled water.Mix well.
  • For tempering, heat 1 tsp oil in a pan.
  • Add mustard seeds and curry leaves.
  • When they start spluttering, pour the tempering into beetroot chaas.
  • Refrigerate and serve chilled.

Frequently asked questions

Can Beetroot Chaas be made in advance?

If stored for too long, beetroot chaas tends to lose its vibrant colour.  Hence it is best to prepare it fresh. However it can be made few hours in advance and refrigerated. While serving, stir it well.

Can we customise the spices and seasonings in beetroot chaas?

Yes. It can be adjusted according to your taste preferences. You can use black pepper powder, chaat masala, coriander leaves etc.

Can store-bought beetroot juice be used instead of fresh beetroot?

Yes you can use store bought beetroot juice but the flavour may not be the same as in case of fresh beetroot.
