Cucumber Chaas – Chaas made by blending curds, cucumber, few herbs and spices.

We are in the midst of summer and the scorching summer can leave us dehydrated . It is essential to remain hydrated throughout the day. There is nothing better than desi summer coolers to keep our body hydrated.  It is any day better than carbonated drinks. One such cooling drink is Chaas or buttermilk. Apart from being flavourful, it is good for digestion.

Chaas is  healthy, cooling beverage made with curds, water and salt. The basic chaas recipe needs only these three ingredients. But chaas can be made in numerous other ways by adding spices, by blending curds with veggies, by adding a tempering to the chaas and so on. About Cucumber Chaas

Cucumber chaas is made by blending chopped cucumber alongwith curds, spices and herbs.  Cucumber is a summer must-have vegetable as it is high in water content. It keeps the body cool and also helps to detoxify the body. The already healthy chaas becomes healthier by adding cucumber to it. Cucumber chaas is very easy to make and as this is a no-cook recipe, even kids can be involved in making chaas.

List of ingredients to make Cucumber Chaas

Curds
Cucumber
Herbs
: mint, coriander leaves and ginger
Spices : green chilly, roasted cumin powder
salt

Step-wise recipe with pictures

Peel and chop cucumber.

 

Combine  chopped cucumber, chopped green chilly, grated ginger, mint leaves, chopped coriander leaves and curds .

Blend

Next add water, salt and roasted cumin powder.

Mix well using a wooden churner.

Refrigerate and serve chilled. Sprinkle some roasted cumin powder on the buttermilk while serving.

Notes:

You can also add a tempering to this buttermilk. For the tempering, heat 1/2 a tsp oil. Add mustard seeds and curry leaves. When the seeds crackle, pour the tempering into the butter milk.

Variations can be made by replacing cucumber with beetroot. Spices like black pepper powder and black salt can also be added.

I have used a wooden churner to churn the buttermilk. You can add water directly to the blender jar after blending cucumber and curds and run the blender for few seconds.

Ingredients

  • 1 cucumber
  • 1 cup of curds
  • 1 green chilly, chopped
  • ¼ tsp grated ginger
  • 2 tbsp mint leaves
  • 1 tbsp fresh coriander leaves
  • ½ tsp roasted cumin powder
  • salt to taste

Instructions

  • Firstly, peel and chop cucumber into small pieces.
  • Transfer chopped cucumber to a blender jar. Add chopped green chilly, grated ginger, mint leaves, fresh coriander leaves and curds.
  • Blend until smooth.
  • Now,add 2 cups of chilled water, salt and roasted cumin powder. Mix well.
  • Refrigerate and serve chilled. 

Notes
