Sandwiches are easy to make and can be customised as per individual preferences. There are countless variety of sandwiches one can make. A basic sandwich consists of two slices of bread with a filling in between. With its endless variety of fillings, sandwiches make a great option for breakfast, lunch as well as dinner.
Bombay Sandwich is a popular sandwich sold on the streets of Mumbai. Also known as Bombay grilled sandwich, it is enjoyed by kids and adults alike.

About Bombay Sandwich
Bombay Sandwich is a popular street food of Mumbai. It is made by layering vegetables, chutneys, spices and cheese between two slices of bread. Bombay sandwich is typically made with white bread slices which is generously slathered with butter, and green chutney.
The commonly used vegetables for this sandwich is tomato, cucumber, onion and boiled potatoes. There are street vendors who also use beetroot and capsicum in the sandwiches. A special masala known as sandwich masala is sprinkled on the vegetables which adds a tangy, spicy flavour to the sandwich.
The sandwich is then toasted on a griddle or sandwich maker until the bread turns crispy and golden brown. The sandwich is served with tomato ketchup and green chutney.
Sandwich masala
Sandwich masala is a spice blend made with cumin seeds, fennel seeds, black pepper, cloves, cinnamon, dry mango powder, black salt and salt. It is used to add flavour to the sandwiches.
List of ingredients to make Bombay Sandwich
Bread: The street style Bombay sandwich is made with white bread. But you can use any bread of your choice.
Spices to make sandwich masala : cumin seeds, fennel seeds, black peppercorns, cloves, cinnamon, dry mango powder, black salt and salt.
Coriander chutney : Fresh coriander leaves, mint leaves, green chillies, garlic, tamarind, sandwich masala, ice cubes and salt.
Vegetables : tomatoes, potato, cucumber and onion
Softened Butter – butter at room temperature
Cheese – grated, mozzarella cheese
Step-wise recipe with pictures
Firstly, to make the sandwich masala, heat a pan. Add cumin seeds, fennel seeds, black peppercorns, cloves and cinnamon. Dry roast till they turn aromatic.
Allow the roasted ingredients to cool completely.
Transfer the roasted ingredients to a mixer jar. Blend to make a fine powder.
Add aamchoor (dry mango powder), black slat and salt. Mix well.
Keep sandwich masala aside.
To make green chutney, blend coriander leaves, mint leaves, green chillies, garlic, sandwich masala, tamarind, salt and ice cubes to a fine paste.
Keep green chutney aside.
Next boil potatoes. Allow the potatoes to cool completely. Prepare all the vegetable slices (tomato, cucumber, onions, boiled potatoes) and keep them ready. Take a slice of bread and apply generous amount of butter.
Next spread green chutney over it.
Place slice of boiled potatoes, onion rings and sprinkle sandwich masala.
Top it with grated mozzarella cheese.
Cover with another slice of bread. Spread butter and green chutney over it.
Place tomato slices, cucumber slices and onion rings over it. Sprinkle sandwich masala.
Top it grated cheese. Cover with another slice of bread. Spread butter on top of the bread slice.
Heat a grill pan. Add some butter, When the butter starts melting, place the sandwich on the pan.
Press the sandwich with a spatula.
Flip the sandwich and cook on the other side till it turns crispy and golden brown.
Take the sandwich off the pan and cut into triangles.
Serve with tomato ketchup and green chutney. Repeat the same with the remaining slices of bread.

Ingredients
For Sandwich Masala
- 2 tbsp cumin seeds (jeera)
- 2 tbsp fennel seeds (sauf)
- 1 tsp black peppercorns (kali mirch)
- 10 cloves (laung)
- 1 inch cinnamon
- 1 tsp dry mango powder (aamchoor)
- ½ tsp black salt (kaala namak)
- ½ tsp salt
For green chutney
- 3 cups of fresh coriander leaves
- 1 cup of mint leaves
- 3 green chillies
- 3 cloves of garlic
- ½ tsp of sandwich masala
- a marble sized ball of tamarind
- 2 ice cubes
- salt to taste
Other ingredients
- 12 slices of bread
- 2 potatoes
- 2 tomatoes
- 1 cucumber
- 2 small onions
- butter at room temperature
- grated mozzarella cheese
Instructions
For Sandwich Masala
- To make the sandwich masala, heat a pan. Add cumin seeds,fennel seeds, black peppercorns, cloves and cinnamon.

- To this powder add aamchoor (dry mango powder),black slat and salt. Mix well. This is the sandwich masala. Keep this aside.

- To make green chutney, blend coriander leaves, mint leaves,green chillies, garlic, sandwich masala, tamarind, salt and ice cubes to a finepaste. Keep green chutney aside.
How to proceed
- Next boil potatoes. Allow the potatoes to cool completely.
- Prepare all the vegetable slices (tomato, cucumber, onions, boiled potatoes) and keep them ready.
- Take a slice of bread and apply generous amount of butter.
- Next spread green chutney over it.
- Place slice of boiled potatoes, onion rings and sprinkle sandwich masala.
- Top it with grated mozzarella cheese.
- Cover with another slice of bread.
- Spread butter and green chutney over it.
- Place tomato slices, cucumber slices and onion rings over it.
- Sprinkle sandwich masala.
- Top it grated cheese.
- Cover with another slice ofbread. Spread butter on top of the bread slice.
- Heat a grill pan. Add some butter, When the butter starts melting, place the sandwich on the pan.
- Press the sandwich with a spatula. Flip the sandwich andcook on the other side.
- Take the sandwich off the pan and cut into triangles.
- Serve with tomato ketchup and green chutney.
