Dudhi Muthiya or Lauki Muthiya is a traditional snack from Gujarati cuisine.
Dudhi Muthiya is a healthy, delicious snack or appetiser made using bottle gourd/lauki/ dudhi. Love lauki or hate it, it manages to find its way into every Indian kitchen in some form or the other. It is a versatile vegetable and can be used to make variety of dishes. Its mild flavour makes it adaptable to both savoury and sweet preparations. It can be used to make sabzi, soup, dal, juice, dessert etc. Dudhi halwa is a popular Indian dessert and is made during festive occasions.
Dudhi or bottlegourd is a highly nutritious vegetable and is known to offer many health benefits. Despite its nutritive value, some people, especially kids find it bland and do not appreciate lauki sabzi or curry. For such people, lauki can be incorporated in their diet by way of lauki halwa, kheer, lauki tikki etc. Another interesting recipe made with lauki is Lauki Muthiya.

About Dudhi Muthiya | Lauki Muthiya
Dudhi Muthiya is a traditional Gujarati snack made with bottlegourd, wheat flour, semolina, gram flour and spices. Bottlegourd alongwith the flours and spices is kneaded into a dough. The dough is then shaped into cylindrical logs and steamed. The steamed logs are cut into pieces, which is then tempered with spices or deep fried. Tempered dudhi muthia makes for a healthy snack as compared to fried muthiyas. The texture of the muthia is soft and spongy when steamed and gets slightly crispy on the outside when fried.
It can be served with green chutney or as a standalone dish alongwith tea. It can also be served as a side dish along with your main course.
List of ingredients to make Dudhi Muthiya
Veggies: Bottle gourd, onion
Flours: Whole wheat flour, gram flour and semolina
Herbs and spices: coriander leaves, turmeric powder, coriander seeds, cumin seeds, green chillies and ginger.
Other ingredients: Oil, salt, baking soda, lemon juice and sugar
For tempering: oil, mustard seeds, sesame seeds, curry leaves, asafoetida, green chillies.
For garnishing: coriander leaves
Step-wise recipe with pictures
Peel and grate bottle gourd.
Squeeze the water from the grated bottlegourd.
In a mixing bowl, add grated and squeezed out bottle gourd.
Grate onion, squeeze out the water from onions and add into the bowl.
Add wholewheat flour, semolina and gram flour. Next add crushed coriander seeds, turmeric powder, cumin seeds, crushed green chillies and ginger, turmeric powder, salt, baking soda, sugar and oil.
Add chopped coriander leaves.
Add few drops of water, Mix well and knead into a smooth dough.
Shape the dough into cylindrical logs and place it on a greased plate.
Place the plate in the steamer and steam for 15 minutes.
Allow the steamed rolls to cool and cut into pieces.
Heat oil in a pan. Add mustard seeds, sesame seeds, asafoetida, curry leaves and green chillies. Saute for few seconds.
Add muthias into the tempering and give a gentle mix.
Add chopped coriander leaves and mix. Serve Dudhi Muthiya with green chutney or as it is.

Ingredients
- 2 cups of grated bottlegourd (lauki/dudhi)
- 1 cup of wholewheat flour
- ¼ cup of semolina (sooji/ rava)
- ¼ cup of gram flour (besan)
- 1 large onion, grated
- 5 green chillies
- 1 inch ginger
- 1 tbsp crushed coriander seeds
- ½ tsp turmeric powder
- 1 tsp cumin seeds
- ¼ tsp baking soda
- salt to taste
- a pinch of sugar
- 1 cup of chopped coriander leaves
- 1 tbsp lemon juice
- 1 tbsp oil
For Tempering
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- ¼ tsp asafoetida
- few curry leaves
- 3 to 4 green chillies, slit vertically
For Garnishing
- 2 to 3 tbsp of chopped coriander leaves
Instructions
