Drumstick Leaves is a simple, nutritious sabzi made using fresh, tender drumstick leaves and minimal spices. Rich in vitamins, minerals, and antioxidants, drumstick leaves sabzi is not only a tasty side dish but also a powerhouse of nutrients. The sabzi pairs well with chapatis and also as an accompaniment with sambar rice or dal rice.

List of ingredients to make Drumstick leaves sabzi

Drumstick leaves : Use tender drumstick leaves for this sabzi
Spices : mustard seeds, green chillies, dry red chillies, curry leaves and asafoetida
Other ingredients : oil, udad dal, fresh coconut and salt.

Step-wise instructions with pictures

Take tender drumstick leaves.

Pluck the leaves and collect them in a bowl.

Wash the leaves, chop them and set them aside.

Heat oil in a pan. Add mustard seeds, udad dal, asafoetida, curry leaves, chopped green chillies, dry red chillies, chopped garlic and chopped onion.  Saute for few seconds.

Add chopped drumstick leaves and saute.

Add turmeric powder and mix. Add 2 tbsp water. Cover and cook on low heat for 12 to 15 minutes.

Once cooked, add salt as per taste. Add freshly grated coconut and mix. Cover and cook for few seconds

.Serve hot with chapatis or with rice and dal/sambhar.

Ingredients

  • 1 bunch of drumstick leaves (4 cups of leaves)
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp udad dal
  • a pinch of asafoetida
  • few curry leaves
  • 2 green chillies, chopped
  • 2 dry red chillies
  • 3 cloves of garlic, chopped
  • 1 onion, chopped
  • ¼ tsp turmeric powder
  • ½ cup freshly grated coconut
  • salt as per taste

Instructions

  • Start by plucking drumstick leaves and collect them in a bowl.
  • Rinse the leaves thoroughly with water. Chop the leaves and keep aside.
  • Heat oil in a pan.
  • Add mustard seeds, udad dal, asafoetida,curry leaves, chopped green chillies, dry red chillies, chopped garlic and chopped onion.  Saute for few seconds.
  • Add chopped drumstick leaves and saute.
  • Add turmeric powder and mix. Add 2 tbsp water. Cover and cook on low heat for 12 to 15 minutes.
  • Once cooked, add salt as per taste. Add freshly grate dcoconut and mix.
  • Cover and cook for few seconds.
  • Serve hot with chapatis or with rice and dal/sambhar.
