Gajar ka Halwa is a delicious Indian dessert that holds a special place in the heart of most Indians. This halwa is made by cooking grated tender, red carrots in milk and sweetened with sugar. The essence of Gajar ka Halwa lies in the slow cooking process. The grated carrots are allowed to cook in the milk on slow flame until the mixture reaches a creamy consistency. When the carrots are cooked well, sugar is added to the mixture and is further allowed to cook. Finally, ghee, chopped nuts and cardamom powder are added. This dessert is often prepared for festive and special occasions.
While Gajar ka Halwa tastes delicious on its own, combining it with vanilla ice-cream elevates its taste to the next level.

Carrots : Red carrots are best suited to make Gajar ka halwa
Other ingredients : milk, sugar, chopped nuts, ghee and cardamom powder.
Step-wise recipe to make Gajar ka Halwa
Heat a thick bottomed deep pan and add grated carrots.
Next, add milk.
 Let it cook on a slow flame. Keep on stirring occasionally. The carrot should cook properly in the milk. The milk will reduce in quantity.
 When the milk has reduced considerably, i.e. around 90%, add the sugar and mix it well. Keep on stirring the mixture.
When the milk has evaporated fully, add 1 tbsp of ghee, cardamom powder, chopped almonds and pistachios. Mix well and saute for another 5 minutes.

Serve hot or refrigerate and serve chilled.
