Makhane ki  Panjiri | Vrat ki Panjiri

Panjiri is a sweet dish from the Punjabi cuisine. It is generally made with wholewheat flour, ghee, dry fruits, sugar and is served as prasad at pujas. It is also treated as nutritional supplement and given to children and nursing mothers.  I have made the panjiri without using the wheat flour but have used makhanas and dry fruits instead. So, this can be savoured by even people who are fasting.   Lets have a look at the recipe:

Recipe

Ingredients

2 cups Makhana (Lotus seeds)
½ cup almonds (badam)
½ cup cashew nuts (kaju)
¼ cup melon seeds (magaz)
2 to 3 tbsp pistachios (pista)
½ cup dry coconut cut into small pieces
½ cup powdered sugar
3 tsp ghee
1 tsp cardamom powder (elaichi powder)
Almonds, pista and cashew  slivers for garnishing
Dried rose petals for garnishing

Method

  • Heat 2 tsp ghee in a pan.
  • Add the makhanas and roast till they turn crispy.
  • Remove and keep it aside.
  • Add another teaspoon of ghee and roast coconut.
  • Remove and keep it aside.
  • Add, almonds, cashewnuts, watermelon seeds and pistachios. 
  • Saute and roast well.
  • Allow all the roasted ingredients to cool down.
  • Transfer all the roasted ingredients to a mixer jar.
  • Blend  them to a coarse powder.
  • In a mixing bowl, add the ground powder.
  • Add powdered sugar, cardamom powder and mix well.
  • Garnish with almond, cashew, pista slivers and dried rose petals.  
  • You can offer this as bhog, serve it as prasad or store it and have it as a nutritional supplement.
