What is Set Dosa
Set Dosas are a popular breakfast dish from Karnataka known for their soft, porous texture and are typically served in sets of three or four. Â These dosas are smaller, thicker and porous making them perfect for soaking up chutneys and sambar.
About Sprouted Ragi Set Dosa
Sprouted Ragi Set Dosas are set dosas made with sprouted ragi in addition to rice and udad dal. It is a twist to the traditional set dosa and is more nutritious with the addition of ragi. Finger millets are sprouted and added to soaked rice and udad dal to make the batter. The batter is then fermented to make set dosas.
Step-wise instructions with pictures
In a bowl, add 1 cup of rice, 1 cup of urad dal, and 1 teaspoon of methi seeds.
Add water and rinse it a few times . Drain the water. Add fresh water and let it soak for 6 to 7 hours.
Take 2 cups of sprouted ragi.
Transfer the sprouted ragi, along with the soaked rice and urad dal, into a mixer jar.
Add some water and blend to a fine paste.
.Pour this batter into a large bowl, add salt, and mix well. Set it aside to ferment for 10 to 12 hrs.
Once the batter is fermented, it’s ready to use. This batter is versatile and can be used to make both idlis and dosas. For idlis, you can use the batter as is.
For dosas, you’ll need to thin it down by adding some water. Take a small portion of the batter in a bowl, add water, and mix well.
Pour the batter onto a hot dosa pan, cover, and cook on low heat. You can drizzle some ghee around the dosa for added flavor.
Sprouted Ragi set dosa is ready to be served. Serve theses dosas in asset of three or four.

Ingredients
- 2 cups of sprouted ragi
- 1 cup of rice
- 1 cup of udad dal
- 1 tsp of methi seeds
- salt to taste
- Oil /ghee for cooking dosas
Instructions
- In a bowl, add rice, udad dal and methi seeds. Add water and rinse few times. Drain the water.
- Add fresh water and let the rice and udad dal soak for 6 to 7 hours.
- After 7 hours, transfer soaked rice and udad dal to a mixer jar alongwith sprouted ragi.
- Add little water and blend to a fine paste.
- Transfer the batter to a vessel/bowl. Add salt and mix well. Set the batter aside to ferment for 10 to 12 hours.
- Once the batter is fermented, it is ready to use.
- This batter  can be used to make both idlis and dosas.
- For idlis, you can use the batter as it is. For dosas, you'll need to thin it down by adding some water.
- Take a small portion of the batter in a bowl, add water, and mix well. Â
- Pour ladleful of batter onto a hot dosa pan,cover, and cook on low heat.
- You can drizzle some ghee around the dosa for added flavor.
- Sprouted Ragi set dosa is ready to be served.
