Suran Rava Fry is a simple and delicious recipe made with yam.  It is an excellent alternative to fish fry as it offers a similar crispy texture, making it a satisfying substitute for fish.

Suran Rava Fry is an easy-to-make dish that highlights the earthy flavors of yam. To begin, the yam is peeled and sliced into thin, even pieces, ensuring they cook evenly and attain a crispy texture. These slices are then coated with a flavorful masala paste . Once the yam slices are well-coated with the masala paste, they are dipped into a mixture of rice flour and semolina (rava). The rice flour provides a light, crisp coating, while the semolina adds a nice crunch. The yam slices are then shallow fried until they turn golden brown and crispy on the outside, while remaining tender on the inside.

Suran Rava Fry is a versatile dish that can be served as a side dish with rice and dal, or enjoyed as a standalone snack.

List of ingredients to make Suran Rava Fry

Yam : Yam is of course the main ingredient of the dish,

Masala Paste : The masala paste is made by mixing red chilli powder, turmeric powder, ginger garlic paste, salt and tamarind pulp.

Outer coating : Rava (semolina), rice flour, salt  and chilly powder are mixed to make the outer coating. Rava and rice flour mixed together gives a crispy layer to the yam.

Peel the yam.

Slice into thin, even pieces,  Keep the yam slices immersed in water until you prepare the masala paste.

In a plate, add ginger garlic paste, turmeric powder, red chilli powder, salt and tamarind pulp.  Mix well.

Coat yam  slices with the masala paste.

For the outer coating, mix  rava, rice flour, salt and chilli powder. Mix well.

Coat each yam slice with the rava mixture.

Heat oil for frying. Place the yam slices and fry them on both sides until they turn golden and crisp.

Serve hot.

Ingredients

  • 250 grams yam (suran)
  • 1 tbsp ginger garlic paste
  • ½  tsp turmeric powder
  • 4 tsp red chilli powder
  • 3 to 4 tbsp tamarind pulp
  • salt to taste
  • 2  to 3 tbsp  rava
  • 1 tbsp rice flour
  • Oil for frying

Instructions

  • Peel the yam. Cut yam into thin even, slices. Wash thes lices well. Keep them immersed in water till the time you prepare the masala paste.
  • To make the masala paste, in a plate, add ginger garlic paste, turmericpowder, 3 tsp red chilli powder, salt and tamarind pulp Mix well.  
  • Coat the yam slices with this masala paste.
  • To prepare the outer coating, in a plate, add rava, rice flour, 1 tsp red chilli powder and salt. Mix well.
  • Coat each slice of yam  with this rava rice flour mixture.
  • Heat oil in a pan.
  • Place the yam slices in the pan.
  • Fry on both sides until they turn golden and crispy.
  • Serve hot with dal rice.

What is the best oil for frying yam?

You can use any oil for frying yam. I have used rice bran oil.

What is the right frying technique – shallow frying or deep frying?

You can shallow fry or deep fry the yam. Ensure that you are adding the yam slices in small batches into the oil. Avoid overcrowding the pan.

Can we  use garam masala and  amchoor powder to make  the masala paste?

Yes you can use the spices as per your taste preference.
