Nuchina Unde is a healthy snack  made using lentils and leafy greens.   Originating from Karnataka, this dish derives its name  from the combination of two words ‘nuchchu meaning broken grains and unde is balls or dumplings

About Nuchina Unde

Nuchina Unde is steamed dumplings made using toor dal, chana dal, dill leaves, coriander leaves, curry leaves and spices.  It is more than just a snack. It serves as a hearty meal often enjoyed for breakfast or as a comforting evening treat.

The preparation of Nuchina Unde involves soaking of toor dal and chana dal for few hours. Once soaked, they are ground to a coarse paste alongwith green chilllies and ginger. The lentils paste is then mixed with dill leaves, coriander leaves, coconut and spices. The mixture is then shaped into dumplings and steamed.  The steamed dumplings are drizzled with ghee and served with either chutney or majjige huli.

List of ingredients to make Nuchina Unde

Lentils : Chana Dal, Toor Dal
Greens : Dill leaves, coriander leaves, curry leaves
Spices : green chillies, turmeric powder, cumin seeds, asafoetida
Other ingredients : coconut, salt

Step-wise recipe to make Nuchina Unde

Wash and soak chana dal and toor dal for 3 to 4 hous.

After 4 hours, drain the water and transfer soaked dal to a mixer jar. Add chopped green chillies and ginger. Blend the lentils to a coarse paste without adding water.

 In a mixing bowl, add the lentils paste. Add chopped dil leaves, chopped coriander leaves, chopped curry leaves, fresh coconut, cumin seeds, turmeric powder, salt and asafoetida.

 Mix well.  Shape the lentils paste into oval shaped dumplings.

Place the dumplings in a steamer.

Steam for 10 to 12 minutes.

Drizzle ghee over Nuchina Unde and serve with coconut chutney.

Ingredients

  • 1 cup Toor dal
  • 1 cup chana dal
  • 4 green chillies
  • 1 tbsp chopped ginger
  • 1 cup chopped dill leaves
  • 1 cup chopped coriander leaves
  • 1 cup freshly grated coconut
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • few curry leaves, chopped
  • salt to taste
  • ½ tsp asafoetida (hing)

Instructions

  • Wash and soak chana dal and toor dal for 3 to 4 hous.
  • After 4 hours, drain the water and transfer soaked lentils to a mixer jar.
  • Add chopped green chillies and ginger.
  • Blend the lentils without adding water to a coarse paste.
  • In a mixing bowl, add the lentils paste. Add chopped dil leaves, chopped coriander leaves,chopped curry leaves, fresh coconut, cumin seeds, turmeric powder, salt and asafoetida. Mix well. 
  • Shape the lentil spaste into oval shaped dumplings.
  • Place the dumplings in a steamer. Steam for10 to 12 minutes.
  • Drizzle ghee over Nuchina Unde and serve with coconut chutney.
