About Panchmel Dal
Panchmel Dal is a combination of five different types of lentils making it a protein rich, nutritious dish. Panchmel translates to “mixture of five” as this dish is made by mixing five different types of lentils. This dal is also known as Panchratna Dal where Panch means five and ratna means gems. The five different lentils are referred to as five gems in this recipe. The five lentils used in this dal are tur dal, masoor dal, moong dal, chana dal and udad dal.
Each lentil provides its own texture and nutrition to the dish. The combination of five lentils not only provides a burst of flvours but is also super helthy. It makes a perfect addition to any meal. It can be served with steamed rice, jeera rice or even phulkas/rotis.
List of ingredients to make Panchmel Dal
Lentils : Tur Dal. Masoor Dal, Moong Dal, Chana Dal and Udad dal
Herbs & Spices : mustard seeds, cumin seeds, ginger-garlic paste, green chillies, dry red chillies, red chilli powder, turmeric powder, coriander powder, asafoetida (hing), dried fenugreek leaves (kasoori methi) and garam masala.
Other ingredients : Onion, tomato, ghee, salt
Step-wise recipe with pictures
Take a cup of mixed dal ( mixture of tur dal, masoor dal, chana dal, moonmg dal and udad dal). Wash and soak for minimum 1 hour.
After an hour, drain the water and transfer the soaked dal to a pressure cooker. Add ½ tsp turmeric powder, salt and 2 cups of water. Close the lid and pressure cook for 5 to 6 whistles.
Open the pressure cooker once it cools completely. Kep cooked dal aside.
Heat ghee in a pan. Add mustard seeds and cumin seeds.
When the seeds start crackling, add ginger garlic paste, chopped green chillies, dry red chillies, chopped onion, asafoetida and saute.
Saute till the onions turn translucent. Add chopped tomato and saute till the tomato turns mushy.
Add cooked dal. Add water as required and mix well.
Add turmeric powder red chilli powder, coriander powder and mix.
Add salt as per taste. Add kasoori methi and garam masala.
Cook for 2 minutes on low heat. Serve Panchmel dal with steamed rice or jeera rice.

Ingredients

- 1 tbsp ghee
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tbsp ginger garlic paste
- 3 to 4 green chillies, finely chopped
- 2 dry red chillies
- 1 large onion, finely chopped
- ½ tsp asafoetida (hing)
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp dried fenugreek leaves (kasuri methi)
- 1 tsp garam masala
- salt to taste
Instructions
- Take a cup of mixed dal ( mixture of tur dal, masoor dal,chana dal, moong dal and udad dal).
