Spring Onion Zunka

Spring Onion Zunka – a traditional  dish from the Maharashtrian cuisine made with spring onions and gram flour.

Zunka is a drier version of Pithla and is a staple food of rural Maharashtra. It is made with few simple ingredients and pairs well with bhakri, chapati or as a side dish with meals. For the farmers of rural Maharashtra zunka is an affordable, nutritious food option that can be easily carried tucked within a bhakri. Zunka bhakar is rightly known as the farmer’s food.

In many Maharashtrian homes, zunka is a go-to-option when vegetables are in short supply.  Its ability to be prepared with basic ingredients makes it a practical dish at such times. The ease of making zunka coupled with its ability to provide a flavourful meal without much ingredients makes it a convenient/special dish.

About Spring Onion Zunka

Spring Onion Zunka is a variation of traditional Zunka made by incorporation fresh spring onions in zunka.

Spring Onion Zunka is a simple yet flavourful dish. The primary  ingredients include fresh spring onions and gram flour combined with spices. To prepare Spring Onion Zunka, fresh green spring onions are finely chopped and sauteed in oil alongwith spices. Gram flour, the main element of Zunka is then added and mixed with spring onions. The quantity of oil used in this dish may seem large but it is required to keep the zunka moist.

Spring Onion Zunka pairs well with bhakri and chapatis. It can also be served as a side dish with rice-based meals.

List of ingredients

Spring Onions
Gram flour (besan)
Spices & Herbs
 : mustard seeds, cumin seeds, asafoetida, turmeric, red chilly powder, green chillies and garlic
Other ingredients : oil and salt


Step-wise recipe with pictures

Wash 1 big bunch of spring onion.

Chop spring onion.

Heat oil in a pan. Add mustard seeds, cumin seeds and asafoetida.

When the seeds start crackling, add chopped garlic and chopped green chillies. Saute for few seconds.

Add chopped spring onions and saute till the onions become soft.

Add turmeric powder, salt, red chilli powder and mix.

Now, add gram flour and mix. 

Cover and cook for 3 to 4 minutes.

Uncover and  sprinkle few drops of water. Cover and cook 5 to 7 minutes.

Zunka is ready to be served with bhakris or chapatis.

Ingredients

  • A big bunch of spring onion (3 cups of chopped spring onion)
  • 1 cup of gram flour (besan)
  • 5 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • ½ tsp asafoetida
  • 6 to 7 cloves of garlic, finely chopped
  • 4 to 5 green chillies, finely chopped
  • ½ tsp turmeric powder
  • ½  tsp red chilly powder
  • salt to taste

Instructions

  • Heat oil in a pan.
  • Add mustard seeds, cumin seeds and asafoetida.
  • When the seeds start crackling, add chopped garlic and chopped green chillies. Saute for few seconds.
  • Add chopped spring onions and saute till the onions become soft.
  • Add turmeric powder, salt red chilli powderand mix.
  • Next, add gram flour and mix. 
  • Cover and cook for 3 to 4 minutes. 
  • Uncover and sprinkle few drops of water.
  • Cover and cook for 5 to 7 minutes.
  • Zunka is ready to be served with bhakris.
