About Egg Fried Rice
Egg Fried rice is a comforting dish that can be enjoyed as a standalone meal. Its ease of preparation has made it a favourite amongst many. The only time consuming part of making fried rice is chopping the vegetables. However, if your veggies are prepped and chopped in advance, this dish comes together quickly. The rice used for making fried rice should be cooked and cooled completely. Ideally, a day-old rice stored in the refrigerator works best for fried rice.
Step-wise instructions with pictures
Firstly chop all the veggies and keep aside.
Heat 1 tsp oil in a pan. Add the eggs, season with black pepper powder and salt, and scramble them until cooked. Set the scrambled eggs aside.
Heat 1 tablespoon of oil in a pan and add the chopped garlic. Saute on high heat for few seconds.
Next, add the chopped onions and sauté .
Add the chopped French beans, carrots, capsicum, and cabbage, and sauté on high heat for 1-2 minutes. Season with salt to taste.
Now, add the cooked basmati rice. The rice should be cooled before adding, or ideally, use day-old rice stored in the fridge. Add the scrambled eggs along with soy sauce, black pepper powder, and chili sauce.
Gently mix everything together.
Finally, add a splash of vinegar and mix well. Garnish with chopped spring onion greens and serve hot.

- 3 cups of cooked basmati rice
- 1 tsp plus 1 tbsp oil
- 4 eggs
- 2 tsp black pepper powder
- 7 to 8 cloves of garlic, chopped
- 1 onion, chopped
- 8 to 10 French beans, finely chopped
- 3 green chillies, finely chopped
- 1 carrot, finely chopped
- 1 capsicum, finely chopped
- 1 cup of chopped cabbage
- 1 tbsp soya sauce
- 1 tbsp red chilli sauce
- 1 tsp vinegar
- 2 tbsp chopped spring onion, greens
- salt to taste
