Jalebi – crispy, golden spiral shaped, fried desserts soaked in sugar syrup.
Jalebis hold a special place in Indian cuisine, particularly during festivals and special occasions. These golden beauties are hard to resist and its nearly impossible to stop at just one. Though Jalebis may seem tricky to make at home, they are surprisingly quite simple. If you are looking for a foolproof recipe to make Jalebis at home, then this recipe is perfect.
Traditionally Jalebis are made with fermented batter. But the recipe that I am sharing today does not require fermentation. These delicious treats can be prepared in just an hour.

Step-wise recipe with pictures
Soak saffron in hot water for 15 to 20 minutes.
Heat a pan, add sugar and water.
Add the saffron mixture into this and cook on low heat till the syrup reaches one string consistency.
Add a teaspoon of lemon juice to prevent crystallisation of sugar syrup. Keep this aside.
To make the Jalebi batter, in a mixing bowl, add maida, curds and mix well.
Next add turmeric powder and salt. ( Turmeric is used to give slight yellow colour to the batter).
Add water gradually and mix well to make a semi thick batter. Add baking soda and mix well.
Transfer this batter to a piping bag.
Cut the tip of the piping bag and pipe concentric circles into medium hot ghee/oil.
Fry jalebis on the both sides till they turn crispy.
Remove the jalebis and drop into warm sugar syrup.
Soak the jalebis in sugar syrup for 3 to 4 minutes. Remove the jalebis from the sugar syrup draining the excess sugar syrup.
Repeat same process with the remaining batter.Garnish the jalebis with dried rose petals.

Ingredients
For sugar syrup
- 200 gms sugar
- 100 ml water
- 1 tsp lemon juice
- a generous pinch of saffron (kesar)
- ¼ cup of of hot water
For Jalebis
- ½ cup of refined flour (maida)
- 2 tbsp curds
- 1/8 tsp baking soda
- a pinch of salt
- a pinch of turmeric powder
- Ghee /Oil for frying jalebis
- Dried rose petals for garnishing
