Bread Upma

Bread Upma – a quick breakfast dish/tea-time snack made with leftover slices of bread.

Bread Upma is an interesting way to have bread. It is quick and easy to make. This recipe is a great way to use leftover bread. But I often make this upma with fresh bread too. This makes for a good breakfast, tea-time snack and even lunch box option for kids. It is also known as Bread Usli (Konkani) and Bread Masala.

About Bread Upma

Bread Upma is a simple recipe made using leftover bread. Bread slices are cut into small cubes and cooked with spices and veggies. The recipe can be custom made as per your preference. I have made a basic bread upma by adding bread cubes to a tempering of mustard seeds, curry leaves, green chillies, onions and have added turmeric powder and red chilli powder. There are variety of ways you can make bread upma. You can use veggies such as tomatoes, carrots, capsicum in this recipe. You can also add chana dal and udad dal to the tempering. You can also use pavbhaji masala/ sambar masala in this recipe.

List of ingredients to make Bread Upma

Bread : Any bread – white, brown or multigrain bread can be used to make this upma. I have used brown bread.

Veggies : I have used only onions. But you can add veggies such as tomatoes, capsicum, carrots, peas etc.

Spices & Herbs : Mustard seeds, green chillies, asafoetida (hing), turmeric powder ,red chilli powder, curry leaves and fresh coriander leaves

Garnishing : chopped coriander and sev

Oil, salt and lemon juice.

 

Bread Upma

Step-wise recipe with pictures

Take around 6 to 7 slices of bread. You can also use end pieces of bread.

 

Chop the bread into small cubes.

 

Transfer to a mixing bowl. Add salt and red chilly powder. Toss and keep aside.

 

Chop onion, green chillies and coriander leaves. Set aside.

 

Heat oil in a pan. Add mustard seeds and curry leaves. When the seeds start spluttering, add chopped green chillies. Add chopped onions. Saute till the onion turns soft.

 

Add turmeric powder and red chilli powder.  Mix well.  Sprinkle few drops of water and saute.

 

Add bread cubes and mix well. Check the salt. Add more if needed.

The bread cubes should be coated well with the spices.

Turn off the heat. Garnish with chopped coriander leaves and lemon juice.

 

While serving, garnish with sev. This is optional.

Ingredients

  • 6 to 7 slices of bread
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • a pinch of asafoetida (hing)
  • few curry leaves
  • 3 green chillies
  • 1 large onion
  • ½ tsp turmeric powder
  • 1 tsp red chilly powder
  • 2 to 3 tbsp fresh coriander, chopped
  • 1 tsp lemon juice
  • sev for garnishing

Instructions

  • Chop the slices of bread into small cubes.
  • Transfer bread cubes to a mixing bowl.
  • Add salt and ½ tsp red chilly powder. Toss to mix well. Keep aside.
  • Heat 1 tbsp oil in a pan.
  • Add mustard seeds and asafoetida.
  • When the seeds start spluttering, add curry leaves, chopped green chillies and chopped onion.
  • Saute till the onion turns soft.
  • Add turmeric powder and ½ tsp red chilli powder. Mix well.
  • Sprinkle few drops of water and mix well.
  • Add bread cubes and mix well so that they are coated with the spices.
  • Check the salt and add more if required.
  • Cook on low flame for few seconds.
  • Turn off the heat and garnish with chopped coriander leaves and lemon juice.
  •   While serving bread upma,  garnish with sev although this is optional.

Variations

To the tempering, you can also add udad dal and chana dal

Once the onion turns soft, chopped tomatoes can also be added and cooked till mushy, to which bread cubes can be added.

Veggies such as carrots, peas, capsicum can also be added.

Instead of red chilli powder, you can also use pavbhaji masala or sambar powder.

To sum it up, you can customise bread upma as per your liking.
