Peanut Laddoos – an easy to make laddoos
Peanut laddoos are one of the easiest laddoos one can make. These are primarily made with just two ingredients – peanuts and jaggery. But I have also added cardamom powder which enhances the flavour of the laddoos. Peanuts are an excellent source of proteins and healthy fats. Peanut laddoos are not only tasty but nutritious too. They are a healthy alternative to store bought sweets.
The recipe for peanut laddoo is pretty simple and requires minimal cooking. The only cooking part in this recipe is roasting of peanuts. Roasted peanuts are peeled and ground to a coarse powder. Jaggery is added to the coarse powder and mixed well by running the mixer grinder for few seconds. When the peanuts are roasted and ground, natural fats are released which makes it easier to shape the laddoos.

It is also a good option for kids’ tiffin boxes. These laddoos can be prepared in advance and stored for few days and hence convenient to pack in tiffin boxes.
The ease of preparation, taste and the nutritive value of these laddoos make it a popular choice when you want to make something sweet. The peanuts release natural fats when they are roasted and ground. Hence there is no need to use ghee or oil while making these laddoos, which make these laddoos vegan. In case, you want to add ghee for a richer flavour, you can add a small amount of ghee to peanut jaggery mixture and then shape into laddoos.

Step-wise recipe with pictures
Heat a pan/ skillet. Add raw peanuts.
Roast on low heat till the peanuts turn crunchy and aromatic.
Once the peanuts are roasted well, remove and transfer it to a kitchen napkin . Let it cool a bit. Rub the roasted peanuts alongwith the napkin, between your palms to peel the peanuts.
Keep peeled peanuts aside.
Crush around 3 cardamoms into a fine powder. Keep aside.
Now, transfer the peeled peanuts to a mixer jar.
Blend the peanuts on pulse mode for few seconds to a coarse powder.
Add jaggery and blend again on pulse mode for few seconds.
Take a small portion of the mixture to check if it holds shape.
To this mixture, add cardamom powder and mix well.
Shape into laddoos. Keep the laddoos in an airtight container and serve as required.

- 3 green cardamom or ½ tsp cardamom powder
