3 varieties of Schezwan dosa

Schezwan dosa –  dosa made using schezwan sauce, is an interesting fusion of South Indian and Chinese cuisine.

Dosa is a regular Sunday breakfast dish in my family. There are umpteen varieties of dosa that one can make. For eg. Saada Dosa, Mysore Masala Dosa, Ragi Dosa, Neer Dosa, Rava Dosa, Moong Dal Dosa, Ulli Karam Dosa, Quinoa Dosa and so on. Lately, my kids have taken a fancy to Schezwan Dosas. So, I have been preparing different varieties of Schezwan Dosa. Today, I am sharing 3 types of Schezwan dosa recipe namely Mixed Vegetable Schezwan Dosa, Onion Capsicum Schezwan Dosa and Schezwan Cheese Dosa.

Mixed Vegetable Schezwan Dosa

Schezwan Dosa

Ingredients

2 cups of Dosa Batter
1 tsp chopped garlic (lehsun)
½ tsp chopped ginger (adrak)
2 tbsp sliced spring onion (white part) (hari pyaaz ka safed hissa)
¼ cup carrot slices (gajar)
¼ cup capsicum slices (shimla mirch)
¼ cup chopped cabbage (patta gobi)
schezwan sauce as required
1 tsp tomato sauce
1 tbsp chopped spring onion greens (hari pyaaz)
salt as per taste (namak)
butter as required (makhan)

Method

  • Heat 1 tsp butter in a pan.
  • Add chopped garlic, chopped ginger and saute for few seconds.
  • Add chopped spring onion (white part), carrot slices, capsicum slices, chopped cabbage and saute on high flame for 2 minutes.
  • Add 1 tsp schezwan sauce, tomato sauce and mix.
  • Add salt as per taste.
  • Add chopped spring onion greens and give a mix.
  • Keep this sauteed vegetables aside.
  • Heat a pan. Pour a ladle of dosa batter and spread it in a circular motion to form a thin dosa.
  • Drop 1/2 teaspoon of butter on the dosa.
  • Add a tsp of schezwan sauce and spread on the dosa.
  • Now, spread 3 to 4 tbsp of sauteed vegetables on the dosa.      
  • Drizzle butter around the dosa and cook till the dosa turns crisp. 
  • Once done, roll the dosa and remove .
  • Cut the dosa into two parts and serve. 

Onion Capsicum Schezwan Dosa

Ingredients

Dosa Batter
Chopped spring onion (white part) (hari pyaaz ka safed hissa)
Chopped capsicum (shimla mirch)
Chopped spring onion greens (hari pyaaz)
Butter as required (makhan)
Schezwan sauce as required

Method

  • Heat a pan. Pour a ladle of dosa batter and spread it in a circular motion to form a thin dosa.
  • Drop 1/2 teaspoon of butter on the dosa.
  • Add a tsp of schezwan sauce and spread on the dosa.
  • Drizzle butter around the dosa and cook.
  • Sprinkle 1 tbsp chopped spring onion (white part), 1 tbsp chopped capsicum, 1 tsp chopped spring onion greens.
  • Allow the dosa to cook. Once done, fold the dosa and remove from the pan.
  • Serve hot.

Schezwan Cheese Dosa

Ingredients

Dosa batter
Butter as required (makhan)
Grated cheese, as required
Schezwan sauce
Spring onion greens

Method

  • Heat a pan. Pour a ladle of dosa batter and spread it in a circular motion to form a thin dosa.
  • Drop 1/2 teaspoon of butter on the dosa.
  • Add a teaspoon of schezwan sauce and spread on the dosa.
  • Drizzle butter around the dosa and cook.
  • Sprinkle grated cheese on the dosa. When the cheese starts melting , sprinkle spring onion greens over the dosa. When the  dosa is cooked,  roll the dosa and remove from the pan. Cut into pieces and serve.
