Susla

Susla is a traditional tea-time snack of North Karnataka and south western Maharashtra.

The culinary landscape of India is filled with umpteen number of recipes. Many similar kind of recipes are prepared in different regions with slight variations and are called by different names. Susla is one such example which is made in North Karnataka as well as south west Maharashtra. It is known as Susla or Sushla in North Karnataka, whereas it is known as Sushila in Maharashtra.

About the Recipe

Susla or Sushla is a snack made using puffed rice/ kurmura/ murmura.  This is a quick and flavourful snack and is cherished for its simplicity.  The main ingredients to make Susla include puffed rice, onion, tomato, green chillies , peanuts, roasted chana dal powderand some spices.

To prepare Susla, the puffed rice is rinsed in water and strained  to remove any impurities. Chopped onion and tomato are added to a seasoning of spices and cooked till they turn soft. Washed and drained puffed rice is then added and is finally garnished with coriander leaves.

Susla is served immediately to retain its crispiness. The addition of peanuts gives a delightful crunch and texture to the dish. I like Susla to have lots of roasted peanuts. Hence, I have added ¼ cup of peanuts in this recipe.

Susla can be served as a tea-time snack or as a breakfast dish. It can be served as is or with coconut chutney.

List of ingredients

Puffed Rice
Spices
: mustard seeds, cumin seeds, green chillies, turmeric powder
Veggies & Herbs : Onion, tomato, curry leaves and coriander leaves
Other ingredients: oil, roasted chana dal, lemon juice, sugarand salt

Step-wise recipe with pictures

Blend roasted chana dal to a fine powder. Keep aside.

In a bowl, add puffed rice. Add water and keep it soaked for a minute.

Squeeze out the water from puffed rice.

Washed and drained puffed rice.

Heat oil in a pan. Add peanuts. I have used ¼ cup of peanuts as I like lot of roasted peanuts in this dish. You can adjust the quantity of peanuts as per your preference. Saute till the peanuts are roasted well.

Add mustard seeds, cumin seeds, curry leaves and chopped green chillies. Saute for few seconds.

Add chopped onion. Saute till the onion turns loses its raw smell and turns golden brown in colour.

Add chopped tomato. Saute till the tomato turns mushy.

Add turmeric powder, salt and sugar. Add a tablespoon of water and mix well.

Add washed and drained puffed rice. Give a quick mix.

Add roasted chana dal powder and mix.

Finally add lemon juice and garnish with chopped coriander leaves.

Serve immediately.

Ingredients

  • 3 cups of puffed rice
  • 2 tsp oil
  • ¼ cup peanuts
  • 2 tbsp roasted chana dal
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • few curry leaves
  • 1 large onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 tsp turmeric powder
  • a pinch of sugar
  • salt to taste
  • 1 tsp lemon juice
  • chopped coriander for garnishing

Instructions
