Shevgyachya Shenganchi Aamti – a Maharashtrian style dal made using drumsticks.

About Shevgyachya Shenganchi Aamti
Shevgyachya Shenganchi Aamti is a simple yet flavourful and nutritious dal made using tur dal or masoor dal alongwith drumsticks and spices. Drumstick is an exceptionally nutritious vegetable with variety of uses. Each and every part of Drumstick tree – leaves, fruits, pods, bark, roots finds various uses making it a valuable resource. Drumsticks are used to make sabzi, soup, sambar, dal, etc. This drumstick aamti has a distinct taste coming from the use of goda masala. The aamti is slightly sweet and sour owing to jaggery and tamarind. The aamti pairs excellently with steamed rice and pickle, papad on the side.
I have made this aamti without oil.
List of ingredients to make Shevgyachya Shenganchi Aamti
Dal : You can either use tur dal or masoor dal
Drumstick
Spices : turmeric powder, Goda masala, red chilli powder
Other ingredients : salt, tamarind, jaggery and coriander leaves
Step-wise recipe with pictures
Wash and soak the dal in water for 2 hours.
Drain the water and transfer to a pressure cooker. Add 1 ½ cups of water. Add 1 tsp turmeric powder and salt. Pressure cook for 3 to 4 whistles.
Keep cooked dal aside.
Peel and chop the drumsticks into 2 inch pieces. Wash and keep aside.
Heat a pan and add mustard seeds . When the seeds start crackling, add cumin seeds, curry leaves, asafoetida and saute for few seconds.
Add chopped tomato and saute on low heat.
Add some water to avoid the spices from burning.
Add chopped drumsticks, ½ tsp turmeric powder and mix well. Add around ½ cup water an cook covered till the drumstick is cooked.
Next, add cooked dal, goda masala, red chilli powder, salt, tamarind pulp and jaggery.
Add water if required to adjust the consistency of aamti. Mix well.Cover and cook for 5 to 7 minutes.
Garnish with chopped coriander leaves. Serve hot with steamed rice.
Note: You may also add fresh, grated coconut alongwith the spices.

Ingredients
- ¾ cup masoor dal or tur dal
- 1 ½ tsp turmeric powder
- salt to taste
- 3 drumsticks
- 1 tsp mustard seeds
- ½ tsp cumin seeds
- few curry leaves
- a pinch of asafoetida
- 1 tomato, chopped
- 2 tbsp goda masala
- 1 tsp red chilli powder
- 3 tbsp tamarind pulp
- a small piece of jaggery
- 2 tbsp chopped coriander
Instructions
- Wash and soak the dal in water for 2 hours.
- Drain the water and transfer to a pressure cooker. Add 1 ½ cups of water. Add 1 tsp turmeric powder and salt. Pressurecook for 3 to 4 whistles. Keep cooked dal aside.

- Garnish withchopped coriander leaves. Serve hot with steamed rice.
