About Long Beans Upkari
Long Beans Upkari is a traditional dish from coastal Karnataka, particularly popular in Mangalore. It is a simple, yet flavourful stir-fry made with tender yard long beans which is known as lattande in Tulu and Alasande in Konkani. It is prepared by sauteeing chopped long beans with oil, mustard seeds, chillies and curry leaves. Freshly grated coconut is added towards the end infusing the upkari with subtle sweetness. This dish is served as a side dish with rice and dal or sambar making it a staple in everyday meals and festive occasions alike.
In most Mangalorean homes, festivals are incomplete without a traditional meal served on banana leaf. A traditional festive meal includes variety of vegetables, with upkari being a staple in the meal.
