About Long Beans Upkari

Long Beans Upkari is a traditional dish from coastal Karnataka, particularly popular in Mangalore. It is a simple, yet flavourful stir-fry made with tender yard long beans which is known as lattande in Tulu and Alasande in Konkani.  It is prepared by sauteeing chopped long beans with oil, mustard seeds, chillies and curry leaves. Freshly grated coconut is added towards the end infusing the upkari with subtle sweetness. This dish is served as a side dish with rice and dal or sambar making it a staple in everyday meals and festive occasions alike. 

In most Mangalorean homes, festivals are incomplete without a traditional meal served on banana leaf. A traditional festive meal includes variety of vegetables, with upkari being a staple in the meal. List of ingredients to make Long Beans Upkari

Long Beans : Fresh, tender yard long beans are the star of this dish.

Spices & Herbs : mustard seeds, asafoetida, curry leaves, green chillies, dry red chillies and  turmeric powder

Other ingredients : udad dal, coconut oil, onion, garlic, salt and fresh coconut.

Step-wise recipe with pictures

Wash and chop long beans.

Heat a pan and add 1 tsp coconut oil. Add ½ tsp mustard seeds, ½ tsp udad dal, a pinch of asafoetida, few curry leaves and saute.

Add chopped onion, chopped garlic and saute. Add chopped green chillies and dry red chillies. Saute.

Next, add chopped beans and mix well.

Add turmeric powder, some water and mix well.

Cover and cook for 10 to 12 minutes.

Add salt as required and mix. Finally add ½ cup of freshly grated coconut and mix.

Cover and cook for few seconds. Serve hot.

Ingredients

  • 250 gms yard long beans (chavli/alsande/lattande)
  • 1 tsp coconut oil
  • ½ tsp mustard seeds
  • ½ tsp udad dal
  • a pinch of asafoetida (hing)
  • few curry leaves
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 2 green chillies, chopped
  • 2 dry red chillies
  • ½ tsp turmeric powder
  • 1/3 cup water
  • ½ cup freshly grated  coconut
  • salt to taste

Instructions

  • Wash and chop long beans.
  • Heat a pan and add  coconut oil.
  • Add mustard seeds, udad dal, asafoetida,few curry leaves and saute,
  • Add chopped onion, chopped garlic and saute.
  • Add chopped green chillies and dry red chillies. Saute.
  • Next, add chopped beans and mix well.
  • Add turmeric powder, some water and mix well.
  • Cover and cook for 10 to 12 minutes. 
  • Add salt as required and mix.
  • Finally add ½ cup of freshly grated coconut and mix.  
  • Cover and cook for few seconds. Serve hot.
